Gardening in a Hot Climate: Your Real Season Starts in Fall
If you garden somewhere genuinely hot, you've probably had the experience of following what you thought was sound advice into a disaster.
You start tomatoes in March because that's what the book says. You put lettuce in after the last frost, which where you live is a technicality. You're told to water deeply and less often, and your pots are bone dry by mid-afternoon anyway. By the end of June, your whole bed has bolted, scorched, or quietly stopped, and you're left with the feeling that other people are better at this than you are.
They aren't, it's just that the advice was written for somewhere else.
The short answer: in a hot climate the year runs on a different axis. Fall is your big planting, when cooling soil opens the whole cool-season list; winter is the growing season; spring is a short, early sprint for tomatoes and peppers before the heat; and summer is for holding on, plus the plants that genuinely love it, like okra and sweet potato.
Summer is the season you get through
A temperate garden has one obvious shape to its year. Winter is the wall, summer is the reward, and everything in between is spent racing away from one frost and toward the next. Almost all popular gardening content assumes that shape, because most of the people writing it live inside it.
In a desert, subtropical, Gulf Coast or Mediterranean climate, the year has a different shape, and in some ways it runs the other way around. Your winter is mild and workable, maybe even ideal. Summer is the extreme, and it's the part of the year that decides what you can grow, if anything.
That's not a matter of degree, either. Past a point, heat doesn't slow a vegetable down, it switches it off:
Pollen stops working. Tomatoes and peppers set fruit inside a fairly narrow temperature band. Days above the mid-90s, and especially nights that stay above the mid-70s, and the flowers keep coming while the fruit doesn't. The plant looks healthy and produces nothing, which is one of the more demoralizing things a garden can do to you.
Seeds refuse. Lettuce is the most common case. Its seed goes dormant in warm soil instead of germinating, so a summer sowing just doesn't come up at all, and it isn't the seed's fault or yours.
Greens run for it. Bolting is a plant deciding it's out of time. So the honest summary is that a hot-climate summer is closer to a northern winter, where it limits your options. It's a season to hold the line and keep alive whatever tolerates it, and there's nothing defeatist in saying just that.
The hot-climate planting calendar, season by season
Once you stop trying to follow a temperate calendar, a hot-climate year has a very clear rhythm.
Late summer into fall is the big planting. This is the equivalent of everyone else's spring, and it is the most important stretch of your year. As the heat starts letting go and the soil comes back down into a range seeds will work in (here's why hot soil stops seeds, and the workarounds), the entire cool-season list opens up: lettuce, spinach, arugula, chard, kale, broccoli, cabbage, bok choy, carrots, beets, radishes, turnips, peas. In much of the Sun Belt this runs from late September through November, and further into the subtropics it runs even later. The September guide reads the month from both sides.
Winter is the growing season. Unlike elsewhere, it's not a pause or a cleanup. This is when those plants size up, in weather that suits them, with fewer pests and less watering. Cool-weather greens grown through a mild winter are noticeably better than the same greens struggling through heat.
Spring is a short, fast warm-season act. Tomatoes, peppers, eggplant, beans, squash and cucumbers go in early, and the clock on them is the arrival of the heat rather than the arrival of frost. A hot-climate spring planting has to set its fruit before summer closes the door, which is why going in early matters so much more than it does further north.
Summer is holding on. Shade, water, mulch, and the shortlist of plants that genuinely enjoy that real heat. In the hottest places, many gardeners take a true break here, which is the local equivalent of a northerner perusing seed catalogs in January.
Vegetables that grow in extreme heat
There's a whole category of vegetables bred in hot parts of the world that most northern gardening content barely mentions. Verna carries dozens of plants that are plantable straight through extreme heat, and that list is a good map of where warm-climate food actually comes from:

Why the conventional calendar gets it backward
Two things go wrong when general advice meets a hot climate:
The first is that a planting calendar is written from a place, whether or not it says so. "Sow in spring, harvest in summer" is a sentence about a specific latitude wearing the clothes of a universal rule. When applied to Phoenix or Houston or the Central Valley, it doesn't just miss slightly. It lands in the wrong half of the year. Onions are the sharpest example: in a warm climate they're a fall planting, and the variety choice is everything.
The second is subtler and does more damage: the northern year has exactly one limit worth planning around, which is cold, so almost all timing advice is built around frost. In a hot climate you have two limits, and the one that bites first is usually heat. A gardener in Minnesota is asking how long until it gets too cold. A gardener in Tucson is much more often asking how long until it gets too hot, and there's not much content written for that question. And it's worth saying straight up, since it's Gardening 101: a hardiness zone only describes how cold your winter gets. It's obviously useful information, but in a hot climate it's rarely the thing limiting you. Two places can share a zone number and have completely different summers, and the summer can be the problem.
